This is a favorite recipe of mine to serve for brunch. I like using potatoes instead of bread. It is easy and does not need to be made up ahead of time. You certainly can make it ahead of time if desired.
- 1 package of bacon, fried and cooled
- 8 eggs
- 2 cups milk
- 1 large package frozen hash browns, thawed
- 1 1/2 cups cheddar cheese
- mushrooms, onions, black olive, green olives (optional)
- salt and pepper
Grease a 9×13 inch pan. Beat eggs, milk and 1/2 of the cheese. Pour into pan. Add potatoes. Season with salt and pepper. Add any optional ingredients and bacon. Sprinkle remaining cheese on top. Bake @ 350 degrees for one hour or until set.
