Best Whole Wheat Pancakes

Whole Wheat PancakesHere is a great recipe for some really good and easy whole wheat pancakes. They are light and delicious. Whip up a batch for your next Sunday morning breakfast. They whole family will love them.
Ingredients

  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 Tablespoon honey
  • 3 Tablespoons oil
  • 1 Tablespoon vinegar
  • 1 Cup milk
  • 2 eggs

Directions
Pour the 1 Tablespoon vinegar into a small bowl. Add the cup of milk to it. Let set for 10 min.
Mix dry ingredients in a bowl, add oil, eggs and milk and vinegar mixture. Mix just until blended.
Pour pancakes onto a hot greased griddle. When first side is brown, flip to other side and brown.
Serve with butter and syrup or your favorite pancake toppings.

Are you looking for an easy egg dish? This is so easy and delicious. It just takes minutes to put together and then you can put in the oven and get the rest of the meal ready. It’s a great family favorite recipe.

Ingredients

  • 8 eggs
  • 1 cup milk
  • 1/4 pound Canadian bacon or ham, cut up
  • 2 1/2 cups (10 ounces) Gruyere cheese, shredded
  • 1/8 teaspoon nutmeg
  • salt and pepper, to taste
  • 1 Tablespoon butter, melted

Directions
Beat eggs. Add remaining ingredietns, except butter. Pour into buttered 2 quart baking dish. Drizzle top with butter. Bake uncovered @ 350 degrees for 40 minutes.

This is an egg dish that you can create to please the tastes of your guests. It is very easy to make, does not have to be made ahead of time. Try this one soon and add it to your collection of favorite recipes.

Ingredients

  • 3 cups croutons
  • 1 dozen eggs
  • 4 cups milk
  • 1 teaspoon Dijon mustard
  • 1 cup shredded cheese
  • salt and pepper
  • optional ingredients: onion, green pepper, sauage, ham, etc

Directions
Layer croutons on bottom of 9×13 inch pan. Mix remaining ingredients together and pour over croutons. Bake at 350 degrees for 1 hour.

Nani’s Favorite Potato Egg Brunch Bake

This is a favorite recipe of mine to serve for brunch. I like using potatoes instead of bread. It is easy and does not need to be made up ahead of time. You certainly can make it ahead of time if desired.

Ingredients

  • 1 package of bacon, fried and cooled
  • 8 eggs
  • 2 cups milk
  • 1 large package frozen hash browns, thawed
  • 1 1/2 cups cheddar cheese
  • mushrooms, onions, black olive, green olives (optional)
  • salt and pepper

Directions
Grease a 9×13 inch pan. Beat eggs, milk and 1/2 of the cheese. Pour into pan. Add potatoes. Season with salt and pepper. Add any optional ingredients and bacon. Sprinkle remaining cheese on top. Bake @ 350 degrees for one hour or until set.

Skiers French Toast

Here is an easy favorite make ahead recipe that is perfect for Christmas morning. Not sure how it got it’s name, but a day of skiing might be needed to work off this satisfying breakfast.

Ingredients

  • 2 Tablespoons corn syrup (light or dark)
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 loaf unsliced white bread, crusts removed
  • 5 eggs
  • 1 1/2 cups milk
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Directions
Combine syrup, butter and brown sugar in a small pan and simmer until syrupy. Pour over bottom of a 9×13 inch casserole dish. Slice bread into 12 to 16 slices and place over sugar/butter mixture in dish. In a bowl, beat together eggs, milk, vanilla and salt and pour over the bread. Cover dish and refrigerate overnight. Bake @ 350 degrees for 45 minutes and serve hot.

Nani’s Favorite Homemade Granola

I love homemade granola and this is my favorite recipe. You can vary the ingredients to your liking, but this is my favorite combination.

Ingredients

  • 5 cups rolled oats
  • 1 cup sunflower seeds
  • 1 cup wheat germ
  • 1 cup powdered milk
  • 1 cup sliced almonds
  • 1/2 cup sesame seeds
  • 1 cup coconut
  • 1 cup honey
  • 1 cup vegetable oil
  • 1 Tablespoon cinnamon

Directions
Mix all dry ingredients together in a large roasting pan. Mix honey and oil together and pour over dry ingredients. Stir. Bake at 300 degrees for 1 hour, stirring every 15 minutes.

Additional Tips

  • If raisins or other dried fruits are desired, add after cooking
  • To reduce calories, use 1/2 cup water and 1/2 cup oil
  • Powdered milk is added to increase nutrition, can be omitted
  • Can add or substitute bran, flax seed, pecans, walnuts, etc.

Caramel Pull Aparts

Ahhh, here’s a favorite recipe for Sunday morning brunch. I have never served these to anyone that didn’t love them. This is another oldie, but goodie.

Ingredients

  • 1 pound loaf frozen bread dough, (thawed enough to cut) cut into about a dozen hunks
  • 3/4 cups chopped nuts or apple slices
  • 1 Tablespoon Sugar
  • 1 Tablespoon Cinnamon
  • 1 small package dry vanilla pudding (not instant) mix
  • 1/2 cup brown sugar
  • 1/2 cup butter, cut into pieces

Directions

In a greased bundt or angel food cake pan, layer the nuts (or apples) evenly on the bottom of the pan. Then sprinkle with the cinnamon and sugar. Now layer the hunks of bread dough. Sprinkle the dry pudding mix over the bread dough, then the brown sugar and the pieces of butter. Cover with a towel or plastic wrap and let rise @ room temperature overnight. Bake @ 325 degrees for 30 to 40 minutes until done.

Ingredients

  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 tbsp honey
  • 1 egg, lightly beaten
  • 1 tbsp oil

Directions

  1. Mix dry ingredients.
  2. Add milk, honey and oil, stirring just until moistened.
  3. Cook on preheated griddle.
