Nani’s Favorite Banana Bread

It’s not uncommon for my bananas to get ripe before they get eaten. Banana bread is a favorite family treat. This is my favorite recipe for banana bread. Baking at a lower temperature takes longer, but creates a much more evenly baked bread. I love mine with nuts and/or chocolate chips.

Ingredients

  • 1 cup granulated sugar
  • 1 stick butter, softened
  • 2 large eggs
  • 3 ripe bananas
  • 1 Tablespoon milk
  • 1 teaspoon vanilla
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 to 1 cup chopped nuts, optional
  • 1 cup chocolate chips, optional

Directions
Grease a 9x5x3 loaf pan. Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition. In a small bowl, mash the bananas with a fork. Mix in the milk, cinnamon and vanilla.
Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients stirring just enough to mix well. Add chocolate chips and/or nuts if desired. Pour batter into prepared pan and bake 1 hour 10 minutes or more at 325 degrees. Bread is done when toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool.

Apricot Nut Bread

I love apricots and I love sweet breads, so this is truly a favorite recipe of mine. Make this to serve with your next brunch or as a special treat for your family.

Ingredients

  • 1 1/2 cups dried apricots
  • 1 1/2 cups boiling water
  • 2 Tablespoons shortening
  • 1 1/2 cups sugar
  • 1 teaspoon salt
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 Tablespoon baking soda
  • 1 Tablespoon cream of tartar
  • Directions
    Mix apricots and boiling water together to soften apricots. Add the rest of the ingredients in order given. Mix thoroughly. Pour into 1 large greased bread pan. Bake 1 1/4 hour @ 350 degrees.

Old Fashioned Refrigerator Bran Muffins

Here is an old fashioned bran muffin recipe that was very popular when I was growing up. I do believe everyone had a batch of this batter in their refrigerator. This batter will keep in the refrigerator for 6 to 8 weeks or can also be frozen. I got this recipe from a dear lady that used to be a cook at the local school.

Ingredients

  • 2 cups All
    Bran Muffins
    Bran Muffins
    Bran cereal
  • 2 cups boiling water
  • 5 cups sifted flour
  • 5 teaspoon soda
  • 1 teaspoon salt
  • 3 cups sugar
  • 1 cup vegetable shortening
  • 4 unbeaten eggs
  • 4 cups buttermilk
  • 4 cups 40% Bran Flakes

Directions
Pour boiling water over All Bran. Sift flour with soda and salt. Cream shortening, sugar, and eggs. Add buttermilk alternating with dry ingredients. Fold in the All Bran and Bran Flakes. Fill muffin tins 1/2 full. Bake 20 minutes @ 350 degrees.

Nani Tips

  • You can also add nuts and pour into a loaf pan and make nut bread
  • Add raisins to make raisin bran muffins
  • Substitute Raisin Bran cereal for the 40% Bran Flakes

Wheat Germ Muffins

Here is a healthy favorite recipe. These muffins are delicious and very filling. You will love them.

Ingredients

  • 1 1/2 cups flour
  • 1 cup wheat germ
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon soda
  • 1/2 cup milk
  • 1/2 cup molasses
  • 1/4 cup cooking oil
  • 1 egg, slightly beaten

Directions
Mix dry ingredients. Stir well. Add the other ingredients. Pour into muffin tins. Bake 15 to 18 minutes at 400 degrees.

This is certainly one of my favorite recipes for muffins. I am sure it will be one of yours too. With all the good ingredients in them I like to think that they are somewhat healthy as well as delicious.

Ingredients

  • 2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups sugar
  • 2 cups grated carrots
  • 1/2 cup raisins
  • 1/2 cup nuts, chopped
  • 1/2 cup coconut
  • 1 1/2 apple, peeled and chopped
  • 3 eggs
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla

Directions
Combine flour, soda, salt and sugar in large bowl. To this add carrots, raisins, nuts, coconut and apples. Stir. Combine eggs, vegetable oil and vanilla in separate bowl. Add this mixture to dry ingredients and stir just until moistened. Bake in prepared muffing pan for 20 to 25 minutes at 350 degrees.

Best Ever Scones

My friend Carol is an excellent cook. Eating at her house is always a treat and any recipe she gives me soon becomes a family favorite recipe. This is her scone recipe that she claims is the “best ever”. Hers are delicious. To be honest, mine never turn our quite as good as hers. It must be technique. She loves to serve hers with clotted cream, which is wonderful.

Ingredients

  • 2 1/4 cups unsifted flour
  • 1/2 cup sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cloves (available@ [ad#Myspice Hyperlink])
  • 1/4 cup butter
  • 1 cup heavy cream
  • 3/4 cup currants or craisins

Directions
Combine flour, sugar, baking powder, salt and cloves. Mix well. Add butter and blend for a coarse meal look. Reserve 2 teaspoon cream, add remaining cream and currants and mix lightly with a fork. Knead dough 5 to 6 times. Cut dough in half. Roll each half into a circle at least 1/2 inch thick. Brush with reserved cream and sprinkle with sugar. Cut into wedges. Bake 15 to 18 minutes @ 325 degrees.

Carol’s Hints

  • Always use butter and heavy cream.
  • Take frozen butter and grate with a grater into the dry ingredients.

Old Fashioned Cherry Bread

The Holidays are coming and this is an old favorite recipe from my Mom. She used to always make this sweet bread to serve with her Holiday cookies.

Ingredients

  • 2 eggs, beaten
  • 1 cup sugar
  • 1 8 ounce bottle maraschino cherries
  • 1 1/2 cups flour
  • 1 1 /2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup chopped nuts
  • juice from the cherries

Directions
Cut up cherries and reserve juice. Mix beaten eggs, sugar, and cut up cherries. Add flour, salt, baking powder to this mixture. Add the reserved cherry juice and nuts. Pour into a greased bread pan, 9x5x3. Bake @ 350 degrees for 30 minutes, reduce heat to 325 degrees and bake 15 to 25 minutes more.

This is a favorite recipe for pumpkin bread that was from my Mom’s collection of recipes. It always turns out moist and yummy.

Ingredients

  • 1 cup sugar
  • 1/2 cup oil (my Mom always used corn oil)
  • 2 eggs
  • 1 cup canned pumpkin
  • 1 3/4 cup flour
  • 1 teaspoon soda
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon of each: cloves, allspice, cinnamon
  • 1/3 cup water
  • 1/2 cup raisins or dates
  • 1/2 cup nuts

Directions
Beat the sugar, oil, and eggs together. Stir in the pumpkin and then the rest of the ingredients. Mix well and pour into 2 greased loaf pans. Bake 1 hour @ 350 degrees.
