Easy Fall Off the Bone Ribs

I recently found this recipe on the Penzey Spice Website. I like to smoke ribs, but was looking for an easy oven method. These ribs literally fall off the bone when they are done. Since most of the cooking is done in the oven, they do not have much of a smokey flavor like smoked ribs, but they got rave reviews from my testing crew. I love main dishes that I can put in the oven and walk away and pull them out at serving time with no last minute fuss. Try these soon. They will surely become a family favorite.

  • 3 racks of pork loin aka baby back ribs
  • 1/4 cup sugar
  • 2 Tablespoon Kosher flake salt
  • 1 1/2 teaspoon paprika
  • 3/4 teaspoon cumin
  • 1/4 teaspoon celery seed
  • 1 1/2 teaspoon chili powder
  • 1/2 teaspoon ground pepper
  • 36 ounces liquid, beer, apple juice, etc

Directions
Combine all of the seasonings in a small bowl or baggie. Remove the membrane from the back of the ribs. Pat the ribs dry with a paper towel. Rub the ribs on both sides with the rib rub. Cover them with plastic wrap and refrigerate overnight or several hours. Remove from frig and grill them on both sides on your charcoal grill. I did mine about 10 minutes on each side at about 350 degrees. You could also brown them under the broiler.
Lay each rack on a double layer of aluminum foil. The foil needs to be wide enough to cover the ribs and long enough to tightly roll up and seal the ends. If your foil doesn’t quite make it around, just add another piece and make sure the pieces are sealed tight. Before you seal the second end, pour in 12 ounces of liquid into each foil packet. Now seal that end, put your foil packets on cookie sheets and bake in a 250 degree oven for about 6 hours. No need to peek at them, they will get done, and the time isn’t too crucial.
Now unwrap, transfer to a serving plate and enjoy them with your favorite BBQ sauce

This is another favorite recipe that you can put in the oven and forget about it. It is super easy and very delicious. It is definitely good enough for company.

Ingredients

  • 4 1/2 pound pork center-cut loin, tied if desired
  • 1 Tablespoon Worcestershire
  • 1 Tablespoon soy sauce
  • 2 teaspoons Mrs. Dash
  • 2 teaspoons Lowry’s seasoning salt
  • 2 teaspoons garlic salt
  • 1 cup Pepsi

Directions
Place pork in a 9×13 inch baking dish. Rub with Worcestershire and soy sauce. Sprinkle with Mrs. Dash, Lowry’s and garlic salt. Roll roast and rub to coat with spices. Pour Pepsi over all. Place roast in 350 degree oven. Bake 2 1/2 to 3 hours, until a meat thermometer inserted in the center reads 180 degrees.

This is a really old favorite recipe of mine that I recently found tucked away in the back of my recipe box. This is a super easy, make-ahead crockpot recipe. It is a great recipe for a crowd. It would certainly be appropriate for this year’s Super Bowl Party!

Ingredients

  • 2 cups dry pinto beans
  • 4 cups water
  • 3 pound pork roast, cut into chunks
  • 1 large onion, chopped
  • 1 Tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • 1 Tablespoon oregano
  • 1 can diced green chilies
  • Grated cheese
  • Chopped lettuce
  • Chopped tomatoes
  • Salsa, optional
  • Sour cream, optional
  • King size Fritos

Directions
Put all ingredients in a crockpot except cheese, lettuce, tomatoes, salsa, sour cream, and Fritos. Cook on low for 12 hours. To serve; layer Fritos, crockpot mixture, lettuce, cheese, tomatoes, salsa and sour cream.

Pork Roast with Sauerkraut in Crockpot

Here is an easy favorite recipe that my Mom used to make. You can put it on early in the morning and forget about it the rest of the day.

Ingredients

  • 1 pork loin or pork shoulder roast
  • 1 large can sauerkraut
  • 2 Tablespoons caraway seeds

Directions
Slice 5 cuts into top of the roast and place in crockpot. Add sauerkraut, stuffing some into cuts. Sprinkle with caraway seeds. Cook on low 10 to 12 hours.

Oven Baked BBQ Country Style Ribs

There is nothing like BBQ ribs. I love to smoke ribs on the smoker or on the grill, but sometimes it’s nice to do them in the oven. Here is a favorite recipe of mine for making BBQ ribs in the oven. They are fall apart tender and delicious. Everyone loves these.

Ingredients

  • 3 to 4 pounds country style ribs
  • 1 to 2 teaspoons garlic powder
  • 1 lemon, thinly sliced
  • 1 bottle of your favorite BBQ sauce

Directions
Cover the bottom of a 9X13 inch pan with about 1/16th inch of water. Place the ribs in the pan and sprinkle with garlic powder and layer with lemon slices. Cover and seal tightly with foil. Cook for 2 hours @ 300 degrees. Drain the water, cover with BBQ sauce, cover with foil and cook for 40 minutes more @ 275 degrees.

Country Pasta with Mozzarella

This is a simple recipe that was a family favorite of my youngest daughter. She would frequently request this dish and I was glad to comply since it was so easy and she would happily eat the broccoli.

Ingredients

  • 8 ounces rigatoni, cooked
  • 8 slices bacon, cut into 1″ pieces
  • 2 cups brocolli flowerets
  • 2 cloves garlic, minced
  • 2 cups shredded Mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • pepper, to taste
  • 1/4 cup chopped fresh parsley (optional)

Directions
Cook bacon in a 10″ skillet over medium high heat, stirring occasionally until bacon is browned. Reduce heat to medium and add broccoli and garlic. Cook, stirring occasionally until broccoli is crisply tender. Add rigatoni and remaining ingredients, except parsley. Stir and cook until cheese is melted. Sprinkle with parsley. I like to serve this right in the pan. It is colorful and makes a nice presentation.

Nani Tip
Substitute a can of beans (black, pinto, garbanzo, etc) for the bacon and make this a vegetarian dish.

Baby Back Ribs with Spiced Apple Cider Mop

This is a great favorite recipe if you are a barbecued rib lover and love to grill. The recipe came from a Weber Grill Cookbook. It is great for making smoked ribs in a few hours. They do require frequent basting, thus can be a bit time consuming, certainly worth all the extra effort. Try them and you will agree that they are some of the best ribs you’ll ever eat.

Ingredients

  • 2 cups apple cider
  • 1/4 cup minced shallots or green onions
  • 1 Tablespoon minced jalapeno peppers, seeds removed
  • 1/4 cup ketchup
  • 2 Tablespoons white wine vinegar
  • 2 Tablespoons tomato paste
  • 1 Tablespoon dark brown sugar
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 to 3 slabs baby back pork ribs, about 4 pounds
  • Kosher salt
  • Freshly ground black pepper

Directions
To make the mop, combine the apple cider, shallots and jalapeno a small saucepan. Bring to a boil and cook over medium-high heat until about 1 cup of liquid remains. Then add ketchup, vinegar, tomato paste, brown sugar, salt and pepper. Again bring to a boil and then remove from heat. At this point you can refrigerate mop until ready to use.

Let ribs stand at room temperature for 20 to 30 minutes. Season with salt and pepper. Heat grill to medium indirect heat (on my Weber gas grill, I turn off middle burner and only burn the 2 side burners). Place ribs on grill, rib side down. Baste ribs frequently with the mop throughout the grilling time. It should take 1 1/2 to 2 hours. They are done when the meat is very tender and pulls back from the ends of the bones. Stop basting during the last 10 minutes of cooking.

Unstuffed Pork Chops

This is a favorite recipe for a fall evening. I was raised in the south where pork was always served with apples of some type. I like to serve it with baked apples and a green salad. Homemade applesauce makes a great side dish, too.

Ingredients

  • 5-6 pork chops
  • 1/4 cup butter
  • 1 1/2 cup water
  • 1 8 ounce package stuffing
  • 1 cup coarsley chopped unpeeled apple

Directions
Brown the pork chops and set aside. Combine the butter and water and bring to a boil, to this add the stuffing and apple and toss gently. Spoon the stuffing into a lightly greased 9 inch square pan. Arrange the chops over stuffing. Cover pan with foil and bake @ 350 degrees for 30 min. Uncover and bake 10 minutes more.

Easy Oven Chow Mein

This was an old favorite recipe of my family’s that I made a lot when the kids were young. It is easy and needs only a salad or vegetable to complete the meal.

Directions

  • 1 pound ground beef
  • 1 cup chopped onion
  • 2 cups chopped celery
  • 1 cup uncooked rice
  • 1/3 cup soy sauce
  • pepper to taste
  • 2 cups boiling water
  • 1 can cream of mushroom soup or 1 cup milk
  • 1 small can mushrooms (optional)

Directions
Brown ground beef, add remaining ingredients and place in a casserole dish. Cover and bake @ 350 degees for 1 hour, stirring occasionally. Remove the cover for last 15 minutes of cooking.
