I asked a friend to send me her favorite meatball recipe and this is the one that she sent. They are indeed easy and delicious. The soup on top makes a nice gravy to serve over the potatoes.

Ingredients

  • 2 pounds ground beef
  • 2 eggs
  • 1/4 cup finely chopped onion
  • salt and pepper, to taste
  • 1/2 cup oatmeal (add more if mixture is too soft or moist)
  • 1 can cream of mushroom soup

Directions
Mix ground beef, eggs, onion, salt and pepper. Shape into balls. Roll balls in flour to coat. Brown meatballs in a small amount of oil in skillet. Transfer meatballs into a baking dish or small roaster. Pour can of mushroom soup on top of meatballs and then ½ can of water. Cover and bake for 45 minutes to 1 hour. Serve with mashed or boiled potatoes.

Grandpa’s Indian Corn Stew

A friend of mine shared this favorite recipe of hers. It was given to her by her Grandpa and has been in their family for many years. It is a super easy and quick recipe, perfect for those evenings when you need to have dinner ready in a hurry.

Ingredients

  • 2 medium onions, chopped
  • 1/2 green pepper, chopped
  • 2 Tablespoons butter
  • 1 pound ground beef
  • 1 can whole kernel corn
  • 1 medium size can tomatoes
  • 2 teaspoon sugar
  • 1 teaspoon salt
  • 2 Tablespoons flour, blended with 2 Tablespoons cold water
  • 1 can tomato soup


Directions

Cook onion and pepper in butter for 5 minutes. Add meat and brown well. Add corn, soup, tomatoes, sugar, and salt. Simmer for about 15 minutes. Stir in blended flour and water. Cook until hot.

Grandma’s Beef Stew

This is not my Grandma’s recipe, but a favorite recipe of a friend’s Grandma. This is a real old fashioned recipe and a family favorite. Our Grandma’s didn’t have crockpots, so they slow cooked them in the oven. You can make this in the crockpot, just increase the time.

Ingredients

  • 2 pounds stew meat
  • 2 cups cubed carrots
  • 2 cups celery, sliced
  • 4 small onions, quartered
  • 1 slice bread, diced
  • 4 Tablespoons tapioca
  • 1 large can tomatoes
  • salt and pepper, to taste
  • garlic salt, to taste

Directions
Place all ingredients in a large roaster and baked covered @ 250 degrees for 5 hours.

Nani Tip
Put this in the crockpot in the morning and dinner will be ready when you get home.

Chicken Enchiladas

Here is an easy favorite recipes for chicken enchiladas. It is not authenic Mexican, but tasty and easy.

Ingredients

  • 1 cup onion, chopped
  • 1 clove garlic, minced
  • 1/4 cup butter
  • 1 16 ounce can diced tomatoes
  • 1 cup tomato sauce
  • 1/4 small can green chilies
  • 1 teaspoon sugar
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1 cup Monterey Jack cheese
  • 3/4 cup sour cream
  • 3 to 4 cups chicken, cooked and diced
  • 1 package flour tortillas

Directions
Saute onion and garlic in butter until translucent. Add tomatoes, tomato sauce, chilies, sugar and spices. Simmer for 20 minutes. Fry tortillas until softened, and dip each tortilla in sauce. Put 2 Tablespoons chicken and 2 Tablespoons shredded cheese on top of tortilla, then put a small amount of sauce on top of the cheese. Roll up and place seam side down in 9×13 inch pan. Blend the sour cream with the remaining sauce and pour over tortillas. Sprinkle with cheese. Bake 40 minutes @ 350 degrees.
