Mud Hen Bars

What can beat the combination of chocolate and marshmallows? This is one of those old fashioned bar recipes that will become a family favorite for sure. I am not sure where these bars got their name but they have been around a long time. You just can’t beat some of these old time recipes.

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 3 eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup nuts, coarsely chopped
  • 1 cup brown sugar
  • 3/4 cup chocolate chips
  • 1 cup miniature marshmallows

Directions
Cream butter and white sugar. Add 1 whole egg and 2 egg yolks. Beat well. Add flour, baking powder, and salt. Mix well. Spread in a greased 9×13 inch pan. Put the nuts, chocolate chips and marshmallows over the batter. Beat the remaining 2 egg whites and brown sugar. Spread over all. Bake 30 to 40 minutes at 350 degrees.

Old Fashioned Reuben Hot Dish

Here is a great family favorite recipe. It is tasty and easy to make and has that great Reuben sandwich flavor. Make it soon and enjoy!

Ingredients

  • 1 pound hamburger
  • 1 small onion, diced
  • 1 pound can sauerkraut, rinsed
  • 2 cups uncooked wide noodles
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 cup cheddar cheese, grated

Directions
Brown hamburger and onion. Put half of hamburger in casserole. Top with sauerkraut, rest of hamburger, noodles and cover with soups. Bake for 30 minutes at 350 degrees. Cover with cheese, mix together and bake for 30 more minutes.

Old Fashioned Refrigerator Bran Muffins

Here is an old fashioned bran muffin recipe that was very popular when I was growing up. I do believe everyone had a batch of this batter in their refrigerator. This batter will keep in the refrigerator for 6 to 8 weeks or can also be frozen. I got this recipe from a dear lady that used to be a cook at the local school.

Ingredients

  • 2 cups All
    Bran Muffins
    Bran Muffins
    Bran cereal
  • 2 cups boiling water
  • 5 cups sifted flour
  • 5 teaspoon soda
  • 1 teaspoon salt
  • 3 cups sugar
  • 1 cup vegetable shortening
  • 4 unbeaten eggs
  • 4 cups buttermilk
  • 4 cups 40% Bran Flakes

Directions
Pour boiling water over All Bran. Sift flour with soda and salt. Cream shortening, sugar, and eggs. Add buttermilk alternating with dry ingredients. Fold in the All Bran and Bran Flakes. Fill muffin tins 1/2 full. Bake 20 minutes @ 350 degrees.

  • You can also add nuts and pour into a loaf pan and make nut bread
  • Add raisins to make raisin bran muffins
  • Substitute Raisin Bran cereal for the 40% Bran Flakes

Mississippi Mud Cake

This is an old family favorite recipe from a friend of a friend who was raised in the south. You can’t beat this for a deliciously decadent dessert.

Ingredients
Cake

  • 1 cup butter
  • 2 cups sugar
  • 1/3 cup cocoa
  • 1 1/2 cups flour
  • 4 eggs, beaten
  • 1 cup coconut
  • 1 cup pecans, coarsely chopped
  • 1 7 ounce jar mashmallow creme

Frosting

  • 6 Tablespoons butter
  • 1 square (1 ounce) unsweetened chocolate
  • 1/4 cup milk
  • 3 cups powdered sugar
  • 1 teaspoon vanilla

Directions
Melt butter, add sugar, cocoa,flour and eggs. Beat together by hand. Fold in coconut and pecans. Pour into a greased 9×13 inch pan. Bake @ 350 degrees for 40 minutes. Remove from oven and spread marshmallow creme over cake. Let cool.
Melt butter, chocolate and milk over low head. Add sugar and vanilla, spread over marshmallow creme.

Chinese Chicken

This is a very easy and tasty chicken recipe. You will love the ease of preparation and cooking and the family will gobble it down.

Ingredients

  • 1/3 cup soy sauce
  • 2 Tablespoons oil
  • 1 teaspoon dry mustard
  • 1/2 teaspoon ginger
  • 1/4 teaspoon pepper
  • 1 clove garlic, minced
  • 1 fryer, cut up

Directions
Combine first 6 ingredients. Brush over washed and drained chicken parts. Let stand 1/2 hour, and again brush with sauce. Put chicken in shallow dish or on rack if crispier chicken is desired. Bake at 375 degrees for about 50 minutes, brushing with sauce every 15 minutes.

Old Fashioned Banana Split Dessert

I couldn’t believe it when I found this old family recipe in my Mom’s files. We only had it on rare occasions when Mom wasn’t worrying about fat and cholesterol. Try this dessert for your next family get together. In my opinion this is better than the real thing!

Ingredients

  • 2 -3 bananas
  • graham cracker crumbs
  • 1/2 gal ice cream, Neopolitan or vanilla
  • 1 cup walnuts, chopped
  • 1 cup chocolate chips
  • 1/2 cup butter
  • 2 cups powdered sugar
  • 1 1/2 cup evaporated milk
  • 1 teaspoon vanilla
  • 1 pt whipping cream, whipped and sweetened to taste

Directions
Cover an 11×15 inch p[an with graham cracker crumbs. Reserve 1 cup crumbs. Slice bananas crossways and layer over crust. Slice ice cream in 1/2 inch slices and place over bananas. Sprinkle with 1 cup nuts. Freeze until firm. Melt 1 cup chocolate chips and 1/2 cup butter. Add 2 cups powdered sugar and 1 1/2 cups evaporated milk. Cook and stir until thick and smooth. Cool. Pour over ice cream. Freeze. When this is cold, spread whipped cream over chocolate sauce. Top with reserved crumbs. Freeze

Sicilian Supper

Here is one of those easy family favorite recipes that I love to make. You can’t beat the combination of beef, noodles and cheese. I have no idea why it is called Sicilian, but it is sure to please your family any day of the week.

Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 6 ounce tomato paste
  • 3/4 cup water
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 cup milk
  • 8 ounces cheddar cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic salt
  • 1/2 cup chopped green pepper
  • 2 cups egg noodles

Directions
Cook noodles according to package directions. Brown meat, add onion and cook until tender. Add tomato paste, water, salt, and pepper. Simmer 5 minutes. Heat milk and cheddar cheese. Blend well. Stir in 1/4 cup of the Parmesan cheese, garlic salt, green pepper, and noodles. Mix meat into the cheese mixture and pour into a casserole dish. Bake at 350 degrees for 20 to 30 minutes. Sprinkle top with remaining Parmesan cheese.

Pepper Steak with Rice

This is another old fashioned, family pleasing recipe. It is easy to make and enjoyed by all ages.

Ingredients

  • 3 cups cooked rice
  • 1 pound lean beef round steak, cut into 1/2 inch thick
  • 1 Tablespoon paprika
  • 2 Tablespoons butter
  • 2 cloves garlic, crushed
  • 1 1/2 cups beef broth
  • 1 cup sliced onions
  • 2 green peppers, cut into strips
  • 2 Tablespoons cornstarch
  • 1/4 cup water
  • 1/4 cup soy sauce
  • 2 large fresh tomatoes, cut into eighths

Directions
Pound steak to 1/4 inch thickness. Cut into 1/4 onch wide strips. Sprinkle meat with paprika and allow to stand while preparing other ingredients. Using a large skillet, brown meat in butter, add garlic and broth. Cover and simmer 30 minutes. Stir in onion and green peppers. Cover and cook 5 minutes more. Blend cornstarch, water, and soy sauce. Stir into meat mixture. Cook, stirring until clear and thickened, about 2 minutes. Add tomatoes and stir gently. Serve over rice.

Crouton Egg Dish

This is an egg dish that you can create to please the tastes of your guests. It is very easy to make, does not have to be made ahead of time. Try this one soon and add it to your collection of favorite recipes.

Ingredients

  • 3 cups croutons
  • 1 dozen eggs
  • 4 cups milk
  • 1 teaspoon Dijon mustard
  • 1 cup shredded cheese
  • salt and pepper
  • optional ingredients: onion, green pepper, sauage, ham, etc

Directions
Layer croutons on bottom of 9×13 inch pan. Mix remaining ingredients together and pour over croutons. Bake at 350 degrees for 1 hour.
