I asked a friend to send me her favorite meatball recipe and this is the one that she sent. They are indeed easy and delicious. The soup on top makes a nice gravy to serve over the potatoes.

Ingredients

  • 2 pounds ground beef
  • 2 eggs
  • 1/4 cup finely chopped onion
  • salt and pepper, to taste
  • 1/2 cup oatmeal (add more if mixture is too soft or moist)
  • 1 can cream of mushroom soup

Directions
Mix ground beef, eggs, onion, salt and pepper. Shape into balls. Roll balls in flour to coat. Brown meatballs in a small amount of oil in skillet. Transfer meatballs into a baking dish or small roaster. Pour can of mushroom soup on top of meatballs and then ½ can of water. Cover and bake for 45 minutes to 1 hour. Serve with mashed or boiled potatoes.

Grandpa’s Indian Corn Stew

A friend of mine shared this favorite recipe of hers. It was given to her by her Grandpa and has been in their family for many years. It is a super easy and quick recipe, perfect for those evenings when you need to have dinner ready in a hurry.

Ingredients

  • 2 medium onions, chopped
  • 1/2 green pepper, chopped
  • 2 Tablespoons butter
  • 1 pound ground beef
  • 1 can whole kernel corn
  • 1 medium size can tomatoes
  • 2 teaspoon sugar
  • 1 teaspoon salt
  • 2 Tablespoons flour, blended with 2 Tablespoons cold water
  • 1 can tomato soup


Directions

Cook onion and pepper in butter for 5 minutes. Add meat and brown well. Add corn, soup, tomatoes, sugar, and salt. Simmer for about 15 minutes. Stir in blended flour and water. Cook until hot.

Grandma’s Beef Stew

This is not my Grandma’s recipe, but a favorite recipe of a friend’s Grandma. This is a real old fashioned recipe and a family favorite. Our Grandma’s didn’t have crockpots, so they slow cooked them in the oven. You can make this in the crockpot, just increase the time.

Ingredients

  • 2 pounds stew meat
  • 2 cups cubed carrots
  • 2 cups celery, sliced
  • 4 small onions, quartered
  • 1 slice bread, diced
  • 4 Tablespoons tapioca
  • 1 large can tomatoes
  • salt and pepper, to taste
  • garlic salt, to taste

Directions
Place all ingredients in a large roaster and baked covered @ 250 degrees for 5 hours.

Nani Tip
Put this in the crockpot in the morning and dinner will be ready when you get home.

Super Easy Sloppy Joes

I was browsing through my collection of favorite recipes and came across my sloppy joe recipes. Does anyone make these anymore? I haven’t for years, but I am going to soon. They are so easy and good. It’s the perfect sandwich for a crowd or drop-ins. I am going to give you 2 recipes, these are the ones I like. The instructions are the same for each recipe.

Recipe #1 Ingredients

  • 1 to 1 1/2 pounds ground beef
  • 1/2 cup chopped onion
  • 1 12 ounce bottle chili sauce.

Recipe #2 Ingredients

  • 1/2 cup chopped onion
  • 1 10 1/2 ounce can chicken gumbo soup
  • 3 Tablespoons ketchup, add more if needed
  • 1-2 Tablespoons mustard

Directions
Brown hamburger and onion. Add remaining ingredients and heat through. Serve on hamburger buns. Delicious!

Mom’s Easy Beef Stroganoff

My Mom used to make this favorite recipe only on special occasions. I am not sure why. Maybe round steak was expensive or maybe it was the sour cream that made it special. Anyway I loved it when she served this dish. I think it might have orignally come from the Betty Crocker cookbook. It is so easy to make and very delicious.

Ingredients

  • 2 pounds round steak
  • flour
  • garlic salt
  • 4 Tablespoon butter
  • 1/2 cup water
  • 1/2 cup beef consomme
  • 1 Tablespoon worcestershire sauce
  • 1 Tablespoon soy sauce
  • 1 Tablespoon tabasco sauce
  • 1 can cream of mushroom soup
  • 1 1/2 cups sour cream
  • 3 to 4 cups cooked rice

Directions
Pound flour into the round steak. Cut the round steak into 1 inch cubes. Sprinkle with garlic salt. Brown meat in butter. Add water, consomme, worcestershire sauce, soy sauce, and tobasco. Simmer for 2 hours, adding more water if needed. Remove from heat and cool slightly. Add sour cream and soup. Reheat. Serve over rice.

Nani’s Pizza Casserole

This is another of those favorite recipes for the kids. What kid doesn’t like pizza? This is an quick and easy recipe that will please the whole family.

Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 cup onion, chopped
  • 1/4 cup green olives, chopped
  • 1- 4 oz can mushrooms
  • 1 teaspoon oregano
  • 1/2 teaspoon pepper
  • 1- 12 oz package egg noodles, cooked al dente
  • 2- 10 oz jars pizza sauce
  • 1- 8 oz can tomato sauce
  • 1 cup milk
  • 1 cup sliced pepperoni
  • 8 ounces shredded mozzarella cheese

Directions

Brown meat with onion. Add mushrooms, olives, and spices. Combine noodles, beef mixture, pizza sauce, tomato sauce, milk, and pepperoni. Pour into a 9 x 13 inch pan. Cover and bake 45 minutes at 350 degrees. Sprinkle cheese on top and bake uncovered 15 minutes longer until cheese is melted and light brown.

Amanda’s Stuffed Cabbage

This favorite recipe of mine was given to me many years ago by a friend, who said she got it from an Amish cookbook. I have tried many different recipes for stuffed cabbage, but this is the best. Sometimes it can be difficult to remove the cabbage leaves, so pick out a large cabbage. The leaves will tear, but that won’t hurt. You will enjoy this recipe. You can use the inner part of the cabbage for the coleslaw recipe that I posted yesterday.

Ingredients

  • 1 large head cabbage
  • 1 pound ground beef
  • 1/2 cup raw rice
  • 1 small onion, finely chopped
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 large onion, sliced
  • 2 (8 oz.) cans tomato sauce
  • 1/2 to 1 cup brown sugar
  • 1 large can tomatoes, I use canned whole tomatoes

Directions
Remove 12 large leaves from cabbage. Trim off thick part. Pour boiling water over leaves and let stand for 5 to 10 min. Combine meat, rice, chopped onion, eggs, salt & pepper. Place a mound of meat mixture in cup part of each leaf. Loosely fold over side of leaf and roll up, can secure with toothpicks if desired. In the bottom of a Dutch oven, place a few remaining cabbage leaves. Next arrange a layer of stuffed cabbage and sliced onion. Mix together the sauce and tomatoes and pour over cabbage rolls. Sprinkle sugar on top. Bake covered for 1 hour @ 375 degrees, uncover and bake 2 hours more.

Jim’s Hot Dish

This recipe comes from my friend Nancy. She and I both share the same name and are married to Jims! This is one of her Jim’s favorite recipes. Nothing like good, hearty hot dishes as we move into fall.

Ingredients

  • 1 pound ground beef, browned
  • 4-5 med potatoes, diced
  • 1/2 package Lipton onion soup mix
  • 1 can cream of mushroom soup
  • 1 can vegetable beef soup

Directions
Mix all ingredients together and place into a 2 /12 to 3 quart casserole dish. Bake, covered, at 350 degrees for 1 1/2 hours or until potatoes are tender.

Gibbs Favorite Party Recipe or Wild Rice Hot Dish

This favorite recipe comes from Gibbs Wild Rice and was published at least 30 years ago. There is nothing that quite compares to wild rice. Wild rice is actually not a member of the rice family. It is a grain, but like rice it grows in water.

Ingredients

  • 1 cup wild rice, uncooked
  • 1 pound ground beef
  • 1 can cream of mushroom soup
  • 1 can water chestnuts, sliced
  • 1 can mushrooms with juice
  • 1 can bamboo shoots
  • 1/2 cup soy sauce
  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1/2 cup celery, chopped

Directions
Cook rice according to package directions. Saute onion, green pepper, and celery. Add ground beef and brown. Place all ingredients in a large covered casserole and bake 45 minutes at 350 degrees. Do not add any additional salt.
