Spinach and Feta Bread

This is my second favorite bread machine recipe. It has incredible flavor. I got this recipe from the same book that my rosemary whole wheat bread recipe is from. It is a nice little book called “The Best Bread Machine Cookbook Ever” by Madge Rosenberg. Try this recipe, you will love it.

Ingredients for 1 1/2 pound loaf

  • 3/4 cup frozen spinach, thawed and drained
  • 2 teaspoons active dry yeast
  • 3 cups bread flour
  • 1/3 cup wheat bran
  • 1 1/2 Tablespoons sugar
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons grated nutmeg
  • 1/2 teaspoon black pepper
  • 3 Tablespoons vegetable oil
  • 1 egg
  • 1/3 cup crumbled feta cheese
  • 1/2 cup water

Directions
Mix all ingredients in order suggested by your bread machine.

Watch the dough as it first starts mixing and add flour or water to form a nice soft ball that pulls away from sides of pan.

Oatmeal Sesame Bread

This is a great favorite bread machine recipe. It goes well with any meal and the oats, sesame seeds and brown sugar gives it a sweet flavor. It is a nice soft bread, too.

Ingredients for 1 1/2 pound loaf

  • 1 1/2 teaspoons active dry yeast
  • 2 3/4 cups bread flour
  • 1 teaspoon salt
  • 4 Tablespoons brown sugar
  • 8 Tablespoons sesame seeds
  • 6 Tablespoons rolled oats
  • 2 Tablespoons butter
  • 9 ounces warm water


Directions

Add ingredients in order recommended by your bread maker.

Nani Tip
I like to watch the bread mix for the first few minutes and add extra flour or water if needed. The dough just needs to form a ball and pull away from the sides of the pan.

Soutine’s Rosemary Whole Wheat Bread

This is my all time favorite bread machine recipe. I got this recipe from the first bread machine cookbook that I bought at least 15 years ago and it is still my favorite bread machine cookbook. It is nice little book called “The Best Bread Machine Cookbook Ever” by Madge Rosenberg. I love the rosemary flavoring with the whole wheat.
I have made this bread more times than I could possibly ever count. It always turns out perfect.

Ingredients for 1 1/2 lb loaf

  • 2 teaspoons active dry yeast
  • 3/4 cup bread flour
  • 2 2/3 cups whole wheat flour
  • 3 Tablespoons wheat bran
  • 1 Tablespoon dried rosemary
  • 1 1/2 teaspoons salt
  • 1/4 cup vegetable oil
  • 1/4 cup honey
  • 1 cup + 2 Tablespoons water

Directions
Add all ingredients in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer’s directions.

I always watch my dough as it starts mixing and add water or more flour as needed to form a nice soft dough that is not sticky and just slightly pulls away from the pan.

Magic 6-in-1 Cookies

I ran across this old favorite recipe recently and thought I would share it. It is a good recipe to have on hand during the Holidays. Also it is a great recipe for using up those little dabs of ingredients that aren’t enough to do much with.
Ingredients

  • 3 cups flour
  • 3 teaspoons baking powder
  • 3/4 teaspoon salt
  • 3/4 cup butter, slightly melted
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/3 cup (14 ounce can) Eagle Brand Sweetened Condensed Milk

Directions
In a large bowl, combine all of the above ingredients and blend thoroughly.
Now for the fun part, choose 1 1/2 cups of an item or combination of items from the list below or anything of your choosing. Also you can divide the batter and add different ingredients to each portion.

  • any flavor baking chips (chocolate, peanut butter, butterscotch, etc)
  • nuts
  • raisins
  • cornflakes or other cereal
  • dates
  • coconut
  • dried fruits
  • M&M’s
  • sunflower seeds

Drop cookies by level tablespoonfuls onto a greased cookie sheet. Bake @ 350 degrees for about 8 to 10 minutes or until lightly browned around edges. Remove from baking sheet immediately.

Jeanie and Kent Hrbek’s Stuffed Shells

This is a favorite recipe of mine from many years ago when Kent Hrbek was a Minnesota Twins Superstar. I don’t remember where I got the recipe, but my best guess would be that it was in the local newspaper. It is a delicious vegetarian recipe, but is also enjoyed by meat lovers.

Ingredients

  • 10 ounce package frozen spinach, thawed and well drained
  • 1 cup ricotta cheese
  • 10 ounces shredded mozzarella
  • 1/2 cup grated Parmesan cheese
  • 3 eggs, lightly beaten
  • 1 Tablespoon fennel seeds
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup dried parsley
  • 12 ounces jumbo pasta shells, cooked, drained, and cooled
  • 30 ounce jar chunky spaghetti sauce with tomatoes and mushrooms
  • 8 ounce can tomato sauce
  • 1 1/2 Tablespoon sugar
  • Additional shredded Parmesan

Directions
Make a spinach mixture by combining the spinach, ricotta, mozzarella, Parmesan, eggs,
1 1/2 teaspoon of the fennel, nutmeg and 1/4 cup of the parsley. Fill each pasta shell with 1 heaping teaspoon of the spinach cheese mixture. Arrange in a greased 9 x 13 inch baking dish. Heat the spaghetti sauce, tomato sauce, sugar, remaining fennel and parsley. Pour over stuffed shells. Sprinkle with additional Parmesan. Bake for 30 to 40 minutes until bubbly.

Super M&M Cookies

Here is another oldie but goodie favorite recipe of mine. You can’t beat good ole M&M cookies! These are soft and chewy and putting the M&M’s on top makes them pretty, too. If you are in a hurry you can just mix all the M&M’s into the batter at one time. Always use real M&M’s, knock-offs just aren’t the same.
Ingredients

  • 16 ounces M&M’s
  • 2 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup pecans, chopped (optional)

Directions
Stir together four, baking powder, salt. Set aside. In a large bowl, cream butter and sugars. Add eggs and vanilla and beat until light and fluffy. Add dry ingredients. Add 1 1/2 cups of the M&M’s and the nuts. Stir just until mixed. Drop by rounded tablespoonfuls onto greased baking sheet. Bake @ 350 degrees for 6 to 7 minutes. Remove and use remaining M&M’s to decorate top of each cookie. Return to oven and bake 3 to 5 minutes longer.

Shrimp Curry or Shrimp Vindaloo

I recently tried this new favorite recipe. The original recipe calls for sweet curry powder. I used Vindaloo. It was fabulous and something I will be making again soon. If you are not familiar with Vindaloo, it is a type of curry that originated in India and it is very hot, but very good. The coconut milk and the rice help to tame down the fire in this recipe. If you do not like hot foods, try the original version that calls for sweet curry.

Ingredients

  • 1 pound raw shrimp, shelled and peeled
  • 4 Tablespoons butter or olive oil
  • 1 large onion, chopped
  • 2 Tablespoons Vindaloo or 3-4 Tablespoons sweet curry powder
  • 1 Tablespoon lemon juice
  • 1 14.5 ounce can chopped tomatoes
  • 1 14 ounce can coconut milk, (may not need all)
  • Salt, to taste
  • 3 to 4 cups cooked rice

Directions
Melt the butter or heat olive oil in a deep saute pan (wok works good). Add onion and cook on low heat until onion is transparent. Add the curry or Vindaloo and continue to cook over low heat for about 15 minutes, stirring to form a paste. Add the lemon juice. Add the tomatoes and cook over low heat for another 15 minutes. Start adding the coconut milk until the sauce is the consistency that you want. Simmer for another 15 minutes. Bring to a boil and add shrimp. Cook just until shrimp is done. Add salt if desired. Serve over rice.

Nani’s Vegetarian Baked Beans

This is a favorite recipe of mine for home made baked beans. These are the real thing, made from scratch. They are surprisingly easy. It just takes a little pre-planning. I like to get them in the crockpot the night before. They can cook all night and day and be ready for an afternoon picnic.

Ingredients

  • 3 cups dry navy beans (or your favorite combination of beans)
  • 9 cups water
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 green pepper, chopped
  • 1 cup brown sugar
  • 1 cup Catsup or BBQ Sauce
  • 1 cup water
  • 2 teaspoons dry mustard
  • 2 Tablespoons dark molasses
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • Dash of liquid smoke
  • 1 Tablespoon chili powder
  • Dash crushed red peppers

Directions

Bring the 9 cups of water and the beans to a boil, simmer for 30 minutes. Turn off the heat and let stand for 1 1/2 hours. Drain beans and put in crockpot with the remaining ingredients. Cook on low for 12 to 20 hours. Time will vary with each individual crockpot.

Halibut with Asian Cilantro Sauce
I really love this sauce and this is my favorite recipe for a sauce for fish. It is excellent with halibut, but would be good on other types as fish as well. You can bake the halibut any way you like. I prefer to lightly season mine with salt, pepper and paprika and bake in a convection oven. It is important not to overcook fish, so I always use a meat thermometer and cook it until the internal temperature reaches 145 degrees. Convection oven cooking works great for fish.

Ingredients

  • 2 cups loosely packed cilantro leaves
  • 2 tbsp fresh lemon juice
  • 1 tbsp minced, peeled, fresh ginger
  • 1 green onion, chopped
  • 1 jalapeno chili pepper, chopped
  • 3 tbsp olive oil
  • 1 tsp Asian sesame oil
  • 1 tsp soy sauce
  • salt, to taste
  • 2 – 8 oz halibut fillets, cooked

Directions
Place all ingredients except halibut in food processor and puree. Serve over cooked halibut.
