Pot Roast Meat Loaf

This is a great family favorite recipe that is easy to put together. I love these types of recipes that you can get in the oven, forget about them and do something else until dinner is ready. It is a complete meal and cleanup is easy.

Ingredients

  • 1 pound lean ground beef
  • 2/3 cup evaporated milk
  • 1/3 cup fine bread crumbs
  • 1/4 cup ketchup
  • 1 teaspoon salt
  • 2 teaspoons Worcestershire sauce
  • Dash of pepper
  • 2 teaspoons dried parsley
  • 3 medium potatoes, peeled and sliced
  • 3 medium onions, sliced
  • 3 medium carrots, sliced
  • 1 teaspoon salt

Directions
Combine all ingredients except parsley flakes, vegetables and salt. Shape into loaf. Place in 9×13 inch pan. Place vegetables in layers around meat. Sprinkle with parsley flakes and salt. Cover with foil. Bake @ 375 degrees for 1 hour or until vegetables are done. Remove foil and bake 10 minutes longer.

Old Fashioned Three Bean Salad

This favorite recipe falls into the category of “classic recipes”. Everyone has certainly eaten this and probably made it. This is a great recipe on those occasions when you need to “bring a dish”. It travels well and keeps for days.

Ingredients

  • 1 can green beans, drained
  • 1 can wax beans, drained
  • 1 can kidney beans, drained
  • 1 small green pepper, chopped
  • 1 cup sliced celery
  • 1/2 cup chopped onion
  • 1 jar button mushrooms
  • 1/2 cup vegetable oil
  • 3/4 cup sugar
  • 2/3 cup vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions
Combine vegetables. Combine oil, sugar, vinegar, salt and pepper. Marinate overnight before serving.

Nani Tip

  • Try different types of beans, like Garbanzo, black beans, lima beans or corn.
  • Try olive oil and balsamic vinegar instead of vegetable and vinegar.

Mexican Cheese Dip

My daughter recently found this recipe and passed it on to me. It is a really great dip. I looked for a substitute for the Tequila and agave nectar was the one that was mentioned the most. This will become a great favorite recipe for your Super Bowl Sunday.

Ingredients

  • 1 jar salsa
  • 1 small container sour cream
  • 8 oz cream cheese
  • 1 small package shredded Mexican cheese blend
  • 1 small package shredded Monterey Jack
  • 1/2 cup Tequila


Directions

Put all ingredients into slow cooker and cook on low for 2 hours. Serve with chips or tortillas.

French bread is always good right out of the bread machine. This is similar to French bread, but is called Italian bread because of the addition of olive oil. You will enjoy this easy bread and it will become a family favorite recipe.

Ingredient for 1 1/2 pound loaf

  • 1 1/2 teaspoons active dry yeast
  • 3 cups bread flour
  • 1 1/2 teaspoons salt
  • 1 cup warm water
  • 2 Tablespoons olive oil

Directions
Put all ingredients in bread machine in order suggested by your manufacturer.

Nani Tip

  • Take a look at the bread as it mixes and add more water or flour as needed.
  • If your machine has a French bread setting, use that for this recipe.

Old Fashioned Sauerkraut Hot Dish

For some reason I have been craving sauerkraut. So I have been looking through all of my favorite recipes and just came across this one. It is easy and a good.

Ingredients

  • 1 pound ground beef
  • 1 med onion, chopped
  • 2-3 stalks celery, chopped
  • 1 can or jar sauerkraut
  • 2-3 cups egg noodles, cooked
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 cup cheddar cheese, shredded

Directions
Brown ground beef, onion and celery. Layer the following in a buttered casserole dish: sauerkraut, egg noodles, ground meat mixture, mushroom soup and celery soup. Bake @ 350 degrees for 1/2 hour, covered. Uncover and top with the cheese. Return to oven and bake for another 1/2 hour.

Whole Wheat Bread

This is my favorite whole wheat bread machine recipe. It is light and not real dense. I am sure your family will love this bread as much as mine does.

Ingredients for 1 1/2 pound loaf

  • 1 1/2 teaspoons active dry yeast
  • 3 Tablespoons sugar
  • 1 1/4 cups milk
  • 1 1/2 cups whole wheat flour
  • 1 1 /2 cups bread flour
  • 1 1/2 teaspoons salt
  • 1 1/2 Tablespoons butter

Directions
Add all ingredients in order suggested by your bread maker.

Nani Tip
Add all ingredients and watch during first mixing, adding more liquid or flour as needed, just until the dough forms a soft ball and pulls away from sides of pan.

Grandma’s Round Steak Sauerbraten

Here is another family favorite recipe from my Grandma. Sauerbraten is a German meat dish that is marinated in vinegar, sugar and spices. My Grandma had some German blood, not sure if this was an old family recipe or not. But try this, it is easy and economical.

Ingredients

  • 1 1/2 pounds round steak or stew meat
  • 2 envelopes brown gravy mix
  • 4 cups water
  • 2 Tablespoons minced onion
  • 4 Tablespoons vinegar
  • 4 Tablespoons brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon ginger
  • 2 teaspoons Worcestershire sauce
  • 2 bay leaves
  • flour
  • cooked egg noodles

Directions
If using round steak, cut into cubes. Brown meat in shortening. Combine all ingredients except flour and pour over meat. Simmer slowly for two hours on stovetop. If it cooks down too much, add water. Just before serving thicken with flour to make a thin gravy. Serve over cooked noodles.

Nani’s Favorite Potato Egg Brunch Bake

This is a favorite recipe of mine to serve for brunch. I like using potatoes instead of bread. It is easy and does not need to be made up ahead of time. You certainly can make it ahead of time if desired.

Ingredients

  • 1 package of bacon, fried and cooled
  • 8 eggs
  • 2 cups milk
  • 1 large package frozen hash browns, thawed
  • 1 1/2 cups cheddar cheese
  • mushrooms, onions, black olive, green olives (optional)
  • salt and pepper

Directions
Grease a 9×13 inch pan. Beat eggs, milk and 1/2 of the cheese. Pour into pan. Add potatoes. Season with salt and pepper. Add any optional ingredients and bacon. Sprinkle remaining cheese on top. Bake @ 350 degrees for one hour or until set.

Old Fashioned Banana Pudding

This is a favorite recipe that is probably from the Vanilla Wafer. My Mom used to make it often and it was one of my Dad’s favorites. It is still as good today as it was back when I was a kid.

Ingredients

  • 3/4 cup sugar, divided
  • 1/3 cup flour
  • dash salt
  • 3 eggs seperated
  • 1/2 teaspoon vanilla
  • 2 cups milk
  • 45 Nilla wafers, divided
  • 5 medium ripe bananas, sliced

Directions
Preheat oven to 350. Mix 1/2 cup of the sugar, flour and salt in top of double boiler.
Blend in 3 egg yolks and milk. Cook uncovered over boiling water 10 to 12 minutes or until thickened, stirring constantly. Remove from heat, stir in vanilla.
Reserve 12 wafers for garnish. Spread small amount of custard on bottom of 1 1/2 quart baking dish and cover with layers of 1/3 each of the remaining wafers and sliced bananas. Pour about 1/3 of the remaining custard over bananas, continue to layer wafers, bananas and custard to make a total of 3 layers of each, ending with custard.
Beat egg whites on high w/ electric mixer until soft peaks form. Gradually add the remaining 1/4 cup sugar, beating until stiff peaks form. Spoon over custard. Spread evenly to cover entire surface of custard and sealing well to edge.

Bake 15 to 20 min. or until lightly browned. Cool slightly and top with reserved 12 wafers just before serving.
