I had a supervisor once named, Linda and she would bring these brownies to our meetings. I guess it was her way of bribing us to work harder. It certainly worked! Not only are they heavenly, but they are easy to make, too.

Ingredients

  • 2 packages Pillsbury rich and moist brownie mix
  • 1/2 cup vegetable oil
  • 3/4 cup water
  • 3 eggs
  • 3/4 cup chocolate chips

Directions
Mix all ingredients together and spread into a greased 9×13 inch pan. Bake for 40 minutes @ 350 degrees. Frost with your favorite chocolate frosting.

This is another favorite recipe that you can put in the oven and forget about it. It is super easy and very delicious. It is definitely good enough for company.

Ingredients

  • 4 1/2 pound pork center-cut loin, tied if desired
  • 1 Tablespoon Worcestershire
  • 1 Tablespoon soy sauce
  • 2 teaspoons Mrs. Dash
  • 2 teaspoons Lowry’s seasoning salt
  • 2 teaspoons garlic salt
  • 1 cup Pepsi

Directions
Place pork in a 9×13 inch baking dish. Rub with Worcestershire and soy sauce. Sprinkle with Mrs. Dash, Lowry’s and garlic salt. Roll roast and rub to coat with spices. Pour Pepsi over all. Place roast in 350 degree oven. Bake 2 1/2 to 3 hours, until a meat thermometer inserted in the center reads 180 degrees.

Walnut Oil Vinaigrette

As I have mentioned before, I love to make my own salad dressings. My favorites are ones made with oil and vinegar. This one uses walnut oil, which gives it a very unique flavor. Try it with any salad that is complemented by a nutty flavor.

Ingredients

  • 4 teaspoons Dijon mustard
  • 4 teaspoons honey
  • 1 large clove garlic, minced
  • 1/4 cup red wine vinegar
  • 2/3 cup walnut oil
  • salt and freshly ground pepper

Directions
In a small bowl, combine mustard, honey and garlic; stir in vinegar. Gradually whisk in oil. Season with salt and pepper.

Barbecued Round Steak

I am always looking for easy family recipes that I can put in the oven and forget about. This is one such recipe. This is a favorite family recipe of mine for round steak. The steak is tender and tasty.

Ingredients

  • 1 to 1 1/2 pounds round steak, about 1 1/2 inches thick
  • 2 Tablespoons olive oil
  • 1 clove garlic, minced
  • 1/4 cup vinegar
  • 1 Tablespoon brown sugar
  • 1 teaspoon paprika
  • 2 Tablespoons Worcestershire sauce
  • 1/2 cup ketchup
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 1/4 teaspoon pepper

Directions
Cut round steak into crosswise slices about 1/2 inch wide. Heat oil, brown steak on all sides. Use a slotted spoon to remove meat to a baking dish; set aside. Pour off fat, then place remaining ingredients in skillet; bring to a boil then reduce heat and simmer for 2 minutes. Pour over steak, cover tightly with foil and bake @ 350 degrees for 1 hour. Uncover and bake for 30 minutes longer. Serve with rice or potatoes.

This is a very good bread machine recipe that I received from my friend, Carol. She got it from a baker in Kansas City. It is good, wholesome and easy to make. He told her that honey in the bread keeps the bread soft and the dough should be as soft at possible without being sticky.

Ingredients

  • 1 1/4 cups water
  • 2 Tablespoons honey
  • 2 Tablespoons canola oil
  • 2 cups unbleached white flour
  • 1 cup whole wheat flour
  • 1 1/2 teaspoon salt
  • 1/3 cup flax seeds
  • 2 Tablespoons sunflower seeds
  • 1 Tablespoon poppy seeds
  • 2 teaspoon dry yeast

Directions
Add ingredients to bread machine in order recommended by your machine. You may substitute other seeds or nuts, if desired.

Coca-Cola Cake

Here is another of those old fashioned recipe that our Grandmas used to make. It is delicious and easy to make. It is an old family favorite recipe! Be sure and use classic Coke, not Diet or Coke Zero.

Cake Ingredients

  • 1 box devil’s food cake mix
  • 1 small box (3 to 4 ounces) instant chocolate pudding
  • 4 eggs
  • 1/2 cup vegetable oil
  • 10 ounces Coca-Cola

Frosting Ingredients

  • 1/2 cup butter, softened
  • 1 16 ounce package powdered sugar
  • 2 Tablespoons cocoa powder
  • 1 1/2 teaspoon vanilla
  • 2 ounces Coca-Cola
  • 1/2 teaspoons salt

Directions
Combine cake mix and chocolate pudding. Blend in eggs, vegetable oil, and Coca-Cola. Pour into a greased 9×13 inch baking pan. Bake at 350 degrees for 30 minutes or until toothpick comes out clean. Cool cake for 10 minutes and invert pan and cool completely on wire rack.

For frosting; beat butter at low speed. Gradually add powdered sugar. Add remaining ingredients and blend until smooth.
Spread frosting on cooled cake. If desired, cut cake horizontally into two equal layers and spread frosting between layers.

Monster Cookies

This is a huge recipe! This is the perfect recipe for family gatherings or week-ends at the cabin. Make a batch and keep it in the refrigerator and bake as needed. Nothing is better than an old fashioned monster cookie right out of the oven.

Ingredients

  • 4 cups sugar
  • 2 cups butter (1 pound)
  • 4 1/2 cups brown sugar (2 pounds)
  • 3 pounds crunchy peanut butter
  • 1 dozen eggs
  • 1 Tablespoon vanilla
  • 8 teaspoons baking soda
  • 18 cups oatmeal, old fashioned not instant
  • 1 pound M&M’s
  • 1 pound chocolate chips

Directions
Combine first 7 ingredients and mix well. Add last 3 ingredients. Mix well. Make each cookie from dough about the size of a golf ball, then flatten by hand. Bake at 350 degrees for 10 to 15 minutes, depending on size of cookie. Recipe can be halved and cookies can be made smaller, just adjust cooking time.

Mud Hen Bars

What can beat the combination of chocolate and marshmallows? This is one of those old fashioned bar recipes that will become a family favorite for sure. I am not sure where these bars got their name but they have been around a long time. You just can’t beat some of these old time recipes.

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 3 eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup nuts, coarsely chopped
  • 1 cup brown sugar
  • 3/4 cup chocolate chips
  • 1 cup miniature marshmallows

Directions
Cream butter and white sugar. Add 1 whole egg and 2 egg yolks. Beat well. Add flour, baking powder, and salt. Mix well. Spread in a greased 9×13 inch pan. Put the nuts, chocolate chips and marshmallows over the batter. Beat the remaining 2 egg whites and brown sugar. Spread over all. Bake 30 to 40 minutes at 350 degrees.

Old Fashioned Reuben Hot Dish

Here is a great family favorite recipe. It is tasty and easy to make and has that great Reuben sandwich flavor. Make it soon and enjoy!

Ingredients

  • 1 pound hamburger
  • 1 small onion, diced
  • 1 pound can sauerkraut, rinsed
  • 2 cups uncooked wide noodles
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 cup cheddar cheese, grated

Directions
Brown hamburger and onion. Put half of hamburger in casserole. Top with sauerkraut, rest of hamburger, noodles and cover with soups. Bake for 30 minutes at 350 degrees. Cover with cheese, mix together and bake for 30 more minutes.
